You probably don’t need me to tell you that you can’t eat the leaves / spines of gorse!

But you can eat the flowers, and as the saying goes ‘When gorse is out of flowering then kissing’s out of season!’ you will always find gorse in flower.  It has a strange kind of pea-pod flavour.  Add it to your winter salads for welcome colour.  You can make gorse flower wine, but could you really pick 2 litres of  flowers?!!
